Abstract:
PROBLEM TO BE SOLVED: To provide a method for producing ice creams excellent in storage stability, rich in flavor and good in the smoothness of a spoon.SOLUTION: Provided is a method for producing ice creams comprising: a desalting step for subjecting raw material containing nonfat milk solid by 5 to 50 wt.% or lower; an enzyme addition step for adding enzyme of decomposing lactose to the raw material subjected to the desalting step; a lactose decomposing step S140 of decomposing the lactose contained in the raw material subjected to the desalting step S110 by the enzyme added in the enzyme addition step; and a cooling step of cooling the raw material subjected to the lactose decomposing step S140.SELECTED DRAWING: Figure 2
