Abstract:
PURPOSE: To obtain an imitation cheese product with low calorie and low animal fat content having similar flavor, texture and body to those of whole fat cheese by compounding each specified protein, fat material, water, cheese flavor, emulsified salt and acidulant in specified proportions. CONSTITUTION: This imitation cheese product is obtd. by compounding 5 to 50% of protein comprising (un)ripened low-fat cheese, (un)ripened whole fat cheese, dry powder protein, vegetable protein and mixture of these, 4 to 35% of a fat material comprising 30 to 100% low-calorie fat material or 80 to 0% vegetable fat, 30 to 80% of water, 0.2 to 4% of cheese flavor, 0.2 to 3% of an emulsified salt, and 0.05 to 2% of an acidulant.
