PURPOSE: To obtain α-1,6-glucosidase having a high clarity, by incubating a bacterium, capable of producing the α-1,6-glucosidase, and belonging to the genus Bacillus in a culture medium containing a water-soluble polyacrylate.
CONSTITUTION: A bacterium, capable of producing α-1,6-glucosidase, and belonging to the genus Bacillus, e.g. Bacillus cereus var. mycoides (FERM-P No. 2391), is inoculated into a culture medium containing 0.01W1% water-soluble polyacrylate for a food additive having a polymeriazation degree of 15,000W20,000 and incubated aerobically at pH 6W8 and about 30°C for 2W3 days. A precipitant, e.g. MgSO4 or CaCl2, in an amount of 0.05W0.3M based on the polyacrylate is added to the culture fluid to form a floc, which adsorbs the microorganism or impurity in the culture fluid. The fluid is then filtered or centrifuged to give the α-1,6-glucosidase as a filtrate.
