Abstract:
PURPOSE: In subjecting a fermented solution of amino acid to ultrafiltration, to prevent clogging of ultrafilter during filtration and to improve filtering performances, heating the solution at a specific temperature so that protein, etc. are denatured and agglomerated, subjecting the solution to ultrafiltration.
CONSTITUTION: A fermented solution of amino acid is heat-treated at 50W100°C (preferably several seconds W tens minutes), high polymer substances such as protein, etc. are denatured and agglomerated, and the solution is subjected to ultrafiltration (the film has preferably 5,000W100,000 limited molecular weight of filtration).
