Abstract:

PURPOSE: To provide a method for improving the taste of a high sweetness degree sweetener, capable of reducing the persistent sweet taste which is a defect of the high sweetness degree sweetener, not lowering the peak sweetness degree of the sweetener, and not strengthening a foreign taste and a bitter taste by combining the high sweetness degree sweetener such as aspartame with hesperidin (derivative).
CONSTITUTION: This method for improving the taste of a high sweetness degree sweetener comprises combining 100 pts.wt. of one or more high sweetness degree sweeteners selected from the group of aspartame, stevia Rebaudiana, sucralose and acesulfame K with hesperidin and/or its derivative (preferably methyl hesperidin, glycosyl hesperidin) preferably in an amount of 0.1-20 pts.wt. to reduce the sweet taste persisting as an aftertaste.
