Abstract:
PURPOSE: To improve the flowing behaviors of a food emulsifier based on a fat deriv. and a powdery mixture contg. fat or fat-contg. food by mixing with magnesium hydroxycarbonate and/or pulverization. CONSTITUTION: The flowing behaviors of a food emulsifier based on a fat deriv., e.g. monoglyceride of an edible fatty acid and a powdery mixture contg. fat or fat-contg. food, e.g. powdery sauce contg. fish oil are improved by mixing with magnesium hydroxycarbonate and/or pulverization so as to prevent caking, aggregation, etc.
