To provide an indicator of freshness of royal jelly using a protein in the royal jelly as an index.
This indicator of freshness of royal jelly is characterized in that the protein has the following properties. It is determined that the protein has a peak in about 25 min retention time by a high-performance liquid chromatography using TSK gel G 3000SW manufactured by Toso Co. Ltd. as a column and using 0.1M phosphate buffer solution (pH 7.0) containing 0.3M sodium chloride and 0.05% sodium azide as a developing solution and setting the flow rate of the solution to 0.3 ml/min and setting the column temperature to 35°C and detecting at 280 nm absorbance. The indicator is represented by a value obtained by dividing a content of the indicator of freshness in the royal jelly with total protein in the royal jelly or a value obtained by multiplying the above value by 100.
