Abstract:
To provide a material as food having a favorable mouthfeel and no wrongness feel and besides having an expectation for more preventive effects on fatness, diabetes, etc., namely the one having a high indigestible-component ratio and a good mouthfeel.
An indigestible starch is obtained by a preparing process comprising use of a high-amylose starch contg. 30% or more of amylose, and action of cyclodextrin glucanotransferase to the starch aq. dispersion of a temp. between above the starchy component elution temp. and below the starch particle disappearance temp.
