PURPOSE: To obtain an instant green tea having improved taste, flavor and color, by mixing an extract solution obtained by dissolving and extracting soluble components of green tea leaves with a fine powder of green tea leaves, and drying the resultant mixture.
CONSTITUTION: An extract solution containing soluble components of green tea leaves containing tasting components and flavor components or a concentrate thereof as a fragrant and tasting main component is mixed with a fine powder of green tea leaves as a main shaping and coloring component, and the mixture is dried while making the most of characteristics of both to give a powdery or granular material. The extraction of the components from the green tea leaves is carried out by boiling down the raw or dried green tea leaves or treating the green tea leaves with hot or warm water or steam, and extracting the soluble components by filtering, pressing or centrifuging, etc. The flavor components are contained in an essential oil of the green tea leaves in large quantities, and an organic solvent for leaching the essential oil component may be used together. Thus, an instant green tea having the taste, flavor and color not inferior to those of the original green tea can be easily obtained, and the need for disposal of the tea dregs is eliminated.
