PURPOSE: To provide an instant mushy food which can be reconstituted in a short time by pouring hot water on it, by immersing rice in water, converting to α-form, and forming and expanding the rice to obtain granular modified rice.
CONSTITUTION: Rice is immersed in water, and converted completely to α-form by boiling or cooking, etc. The α-rice is controlled to the water-content of about 20W40%, kneaded with an extruder, a rice pounding machine, a kneader, etc., and formed to the size of a rice grain or thereabout. The forming can be carried out by using an extruder or by combining a roll with a cutter,etc.; however, the use of an extruder is preferable because the kneading and forming can be carried out simultaneously. The water-content of the formed rice is adjusted at about 8W20%. The water-controlled rice is expanded by conventional process to obtain the objective instant mushy food. The expansion can be carried out by using a heat medium such as preheated salt, or with hot air or micro-wave radiation; however, the use of hot air of about 160W300°C is preferable in view of the production cost.
