PURPOSE: To prepare instant noodle imparted with delicious taste and sharp taste using single seasoning and having delicious taste meeting the taste of modern people, by kneading RATSUJAN (fermented Guinea pepper) to instant noodle made from cereal flour.
CONSTITUTION: The objective instant noodle is produced by kneading RATSUJAN to an instant noodle made mainly from cereal flour. Any seasonings containing fermented Guinea pepper, e.g. TOBANJAN (fermented mixture of Guinea pepper and broad bean), KOCCHIJAN (fermented mixture of Guinea pepper and glutinous rice) may be used as the RATSUJAN. Low-grade cereal flour containing wheat bran may be used as a raw material for the noodle since the delicious taste of the RATSUJAN cancels the lowering of palatability caused by the wheat bran. The amount of RATSUJAN is preferably 0.01W2pts. wt. (in terms of RATSUJAN essence) per 100pts. of the cereal flour.
