Abstract:

PROBLEM TO BE SOLVED: To prevent occurrence of lactic acid metabolism causing aerobic deterioration and prevent aerobic deterioration of silage by adding the subject yeast to silage.
SOLUTION: This killer yeast which is unassimilable to lactic acid loses phosphoenolpyruvic acid carboxynase (PEPCK) gene. The killer yeast is added to silage. The killer yeast is obtained by method, e.g. introducing a plasmid pKP2, etc., in which BgI II fragment of PEPCK gene is lost and a maker gene is inserted in stead of the gene into the killer yeast K. lactis IFO 1267 strain, etc. The killer yeast block a gluconeogenesis system and is not grown by using lactic acid as a carbon source.
