To rapidly and quantitatively obtain butter homogenized into dense and uniform structure by successively carrying out kneading, raising of temperature, deaerating, and extruding and kneading and homogenizing of butter kept in low- temperature state by using a twin extrusion screw rotated in different directions.
Twin screws a1 and a2 are rotated in different directions in a barrel (b). Thereby, butter in a low temperature state is quantatively taken in an extruder from a taking-in and carrying part (e) and a material seal is formed on the taking-in side in a packing part (f) and the temperature of butter is raised by kneading and/or shearing butter in a kneading and temperature-raising part (g), and further, pressure of the kneading and temperature-raising part (g) is controlled and deaeration of butter is kept in ready state in a pressure-controlling part (h), and then, deaeration of butter is carried out in a space formed by difference of transfer rate while transferring butter to a kneading and homogenizing part (j) at a faster rate than that of the taking in and carrying part (e) and deaerated butter is kneaded and homogenized while forming the material seal on discharge side without giving carrying force to the screw in the kneading and homogenizing part (j).
