Abstract:
To provide a konjak noodle that is rehydrated in hot water in a short time, and has excellent texture, and a method for manufacturing the konjak noodle.SOLUTION: A konjak noodle 10A includes a konjak inclusion containing a konjak ingredient, sweet sake, and starch as a raw material. The konjak noodle includes 1-3 pts.wt. of konjak powder, 5-20 pts.wt. of the sweet sake, and the rest that is the starch relative to 100 pts.wt. of the raw material. The konjak noodle can be rehydrated in hot water in boiling time in as little as four minutes, and chewy and good feeling of something going down can be felt at the same time. It is therefore possible to sufficiently solve a conventional problem that it is difficult to use a konjak noodle for instant foods.SELECTED DRAWING: Figure 3
