Abstract:

PROBLEM TO BE SOLVED: To obtain the bread which contains lactic-acid bacteria that are able to pass through a stomach to reach intestines in the form of spores and accordingly, enables improvement of environmental conditions inside the intestines by adding spore-bearing lactic acid bacteria to a material composition of bread.
SOLUTION: In this bread contg. spore-bearing lactic-acid bacteria, as the lactic-acid bacteria, preferably, bacteria of Bacillus coagerans, which are thermophilic bacteria and have a catalase are used and added to a material composition of bread, preferably in an amount sufficient to provide a 105 to 1011/50g ratio of the number of bacteria to the weight of the bread product. In a sponge-and-dough bakery process, since the spore-bearing lactic-acid bacteria are mixed into a dough-mixing material under conditions such that the activity of the bacteria with respect to water is comparatively low and accordingly almost no germination of the spores is caused, the addition of the lactic-acid bacteria is favorably performed. Also, since bread is a bulky product, preferably, this bread product is compressed to reduce its volume and thereafter, stored in a frozen state and the frozen bread is thawed out preferably with a microwave oven to avoid any damage to the lactic-acid bacteria due to heat. Further, preferably, the bread material composition contg. the lactic-acid bacteria is also blended with a substance capable of promoting growth of the spore-bearing lactic-acid bacteria, such as oligosaccharide, in an amount sufficient to provide a 0.05 to 10% ratio of the substance to the bread product.
