PURPOSE: To produce a lactic acid fermentation beverage having a complex flavor excellent for drinking, by subjecting a mixture solution of a germinated malt with a whey treated with a proteolytic enzyme to lactic acid fermentation.
CONSTITUTION: A germinated malt, preferably malt extract is mixed with a whey teated with a proteolytic enzyme to prepare a mixture solution preferably at (5/1)W(40/1) weight ratio between the malt extract and whey treated with the proteolytic enzyme expressed in terms of solid of both and in 30W60%(wt./vol.) malt extract concentration. The pH of the mixture solution is adjusted to about 6.8, and the adjusted solution is then heat sterilized and cooled. A precultivated lactic acid bacterium is then added to subject the solution to lactic acid fermentation, and the resultant lactic acid fermentation liquor if desired is concentrated, dried and carbonated.
