Abstract:

To provide a lactic acid-fermented bean curd refuse without reducing a content of edible fiber which is an important nutritious component in the bean curd refuse, preventing the progress of contamination of the refuse with unwanted bacteria and improving preserving property, taste and eat feeling, and a food or beverage containing the same.

This lactic acid-fermented bean curd refuse is obtained by performing the lactic acid-fermentation of the refuse in the presence of a plant cell wall-decomposing enzyme. The food or beverage containing the lactic acid-fermented bean curd refuse is provided. The method for producing the lactic acid-fermented bean curd refuse is also provided.
