PURPOSE: To provide a lactobacillus capable of producing capsular polysaccharide, belonging to Lactobacillus genus, having a specific content of (G+C) and excellent proliferability, capable of being easily cultured, producing a viscous fermentation product and suitable for the production of a lactic fermentation product.
CONSTITUTION: Commercially available kefir grain is activated, the activated kefir grain is cultured and a viscous colony is selected, separated and purified to obtain the objective lactobacillus [e.g. ZKB 101 strain (FERM P-9229)] belonging to Lactobacillus genus, having a (G+C) content of 41.94±0.18% and capable of producing capsular polysaccharide. The lactobacillus exhibits normal proliferation even by altering the kind and condition of the medium and is useful for the production of a lactic fermentation food such as fermented milk and cheese. The ZKB-101 strain exhibits antimutagenecity against a mutagenic substance Glu-P-2 and produces capsular polysaccharide active to suppress the proliferation of IMC carcinoma cell.
