PURPOSE: To accurately peel off rounds from a carcass in high accuracy and yield by incising a carcass with a disk blade and knives and tearing both rounds from the carcass by the interaction of guides and chains while moving the carcass with a single-row blade chain.

CONSTITUTION: The objective processor is composed of an incision section and a round-peeling section. The incision section is composed of a carcass- introducing part, a double-row blade chain conveyor, a back-incision disk blade part and a group of crotch-incision knives and the round-peeling section is composed of a single-row blade chain conveyor and respective guide parts. In the incision section, a carcass is moved by a shackle and the double-row blade chain while keeping a desired posture and incised at prescribed positions with the disk blade 9 and knives 11a, 13a, 14a. The carcass is transferred with the single-row blade chain 19 in the round-peeling section, hip joints are disengaged by the interaction of the chain and the guide parts and the rounds are peeled off from the carcass.
