Abstract:
PROBLEM TO BE SOLVED: To provide a ponzu soy sauce seasoning capable of suppressing generation of nasty smell during storage and degradation odor caused by heat sterilization without using a special container, and keeping a bodily feeling of soy sauce even when being heated without being lost.SOLUTION: There is provided a ponzu soy sauce seasoning containing citrus fruit juice, vinegar and soy sauce. In the ponzu soy sauce seasoning, the content of each component (a)-(e) in the seasoning is within each following range; (a) p-cymene:0.0006-4.0 ppm, (b) potassium ion:0.02-5.0 mass%, (c) sodium ion:0.5-4.0 mass%, (d) acetic acid:0.5-3.5 mass% and (e) citric acid:0.2-4.5 mass%.SELECTED DRAWING: None
