Abstract:

To obtain a liquid state food for eating by freezing it in a freezer, easily putting a spoon into the food immediately after taking it out from the refrigerator, and eating as shaving a crunching ice.

This liquid state food containing microgells is obtained by cooling an aqueous solution obtained by incorporating a polysaccharide having reactivity with calcium, gellant gum, pectin, carageenan, etc., and heating for dissolving, cooling at a gelation temperature or lower and adding a calcium salt, or by cooling an aqueous solution obtained by incorporating a polysaccharide having reactivity with calcium, gellant gum, pectin, carageenan, etc., heating for dissolving and adding a calcium salt, at a gelation temperature or lower.
