Abstract:
PROBLEM TO BE SOLVED: To provide a long term storage bread for disaster prevention, providing tasty bread similar to daily even at emergency by solving generation of mold, dryingness of texture or lack of moist feeling, and having expiration term of 5 yr. even under severe conditions such as large earthquake or flood damage.SOLUTION: There is provided a long term storage bread for disaster prevention which is sealed by adjusting an order of blending or milling of a dough of breads or temperature or frequency of mixing, and encapsulating age-less in a barrier Al lamination film package which does not pass ambient air and light after burning and cooling the dough from fermentation. There is provided a long term storage bread for disaster prevention with suppressing proliferation of saprophyte by using same paper container from fermentation to burning of the dough, inputting the paper container with a cylindrical shape or a square shape containing the bread dough into a steel-made jig which is mounted on an iron plate for burning for preventing caving or burning uneven during fermentation and burning and burning the dough without contacting paper containers each other, suppressing generation of burning uneven by arranging perforation with vertical split reverse T shape type to make good fire effect, and suppressing dew condensation by ensuring extract of moisture of breads even after burning.SELECTED DRAWING: Figure 1
