Title:
LOW CALORIC EXTENDER
Document Type and Number:
Japanese Patent JPH0541961
Kind Code:
A
Abstract:

PURPOSE: To obtain the subject extender having specific 1→4 glycoside bond content and caloric value by adding hydrochloric acid to corn starch and heating with a twin-screw extruder.

CONSTITUTION: Corn starch is added with about 3-10% of an aqueous solution of hydrochloric acid having a concentration of about 1% and the mixture is heated in a twin-screw extruder at 120-200°C to obtain the objective extender having a 1→4 glycoside bond content of ≤50% and a caloric value of ≤2.2kcal/ g and falling within the range of ±5% from the value Y defined by the formulas I to IV, etc. [Y is caloric value (kcal/g); X1 is amount of nonreducing terminal glucose residue (%); X2 is amount of glucose residue having 1→4 glycoside bond (%); X3 is amount of glucose residue having 1→6 glycoside bond (%); X4 is amount of glucose residue having l→3 glycoside bond (%)].
