Abstract:

PURPOSE: To obtain the subject extender having specific 1→4 glycoside bond content and calorific value by adding hydrochloric acid to potato starch and heating the mixture with a twin-screw extruder.

CONSTITUTION: The objective extender having a 1→4 glycoside bond content of ≤50% (preferably ≤40%), a variation range of Y value defined by formula I and formula II [Y is calorific value (kcal/g); X1 is amount of nonreducing terminal glucose residue (%); X2 is amount of glucose residue having 1→4 glycoside bond (%)] of ±5% or less and a calorific value of ≤2kcal/g (preferably ≤1.8kcal/g) is produced by adding hydrochloric acid to porato starch and heating the mixture at 120-200°C (preferably 130-180°C) with a twin-screw extruder.
