Abstract:
PROBLEM TO BE SOLVED: To provide low-glucide beer-taste fermented alcoholic beverage having new flavor with beer-like soft and smooth texture in which long-lasting taste is recognized, and a method for producing the beverage.SOLUTION: According to the present invention, there are provided a low-glucide beer-taste fermented alcoholic beverage that uses malt or the like as at least a part of a raw material, in which a ratio of the amount of peptide having the molecular weight of 10 to 20 kDa with respect to the entire protein amount is larger than 2.5%, and a method for producing a low-glucide beer-taste fermented alcoholic beverage which includes a process of blending one or two or more peptides having the molecular weight of 10 to 20 kDa.SELECTED DRAWING: None
