Abstract:

PURPOSE: To obtain a processed cheese type low fat cheese causing a proper oil-off state and uniformly melting on its thermal cooking by applying a fused salt and a specific emulsifier to a low fat cheese.

CONSTITUTION: A raw material is fed into an emulsifying tank, mixed with a fused salt and an emulsifier heated with steam and simultaneously stirred. The emulsifier is a W/O type emulsifier, and can prevent an advance in an O/W type emulsion in the tissue of a low fat cheese having a fat content of 4-23wt.% and give a good threading property, etc.
