Abstract:
To provide a low-glucide beer-taste fermented alcoholic beverage having a new flavor with a beer-like soft and smooth texture in which the long-lasting taste is recognized, and a method for producing the beverage.SOLUTION: According to the present invention, there are provided a low-glucide beer-taste fermented alcoholic beverage that uses malt or the like as at least a part of raw material, in which a ratio of the amount of peptide having the molecular weight of 10 to 20 kDa to the total protein amount is larger than 2.5%, and a method for producing a low-glucide beer-taste fermented alcoholic beverage which includes a process of blending one or more peptides having the molecular weight of 10 to 20 kDa.SELECTED DRAWING: None
