Abstract:

To produce a food obtained by directly making mushrooms as a low granulated material without semi-drying the mushrooms, an enzyme-decomposed mushroom foods obtained by performing an enzyme decomposition treatment without seeding Koji mold after the low-granulation to impart a new functionality and an enzyme-decomposed and fermented food of the mushrooms obtained by seeding useful microorganisms after the enzyme decomposition of the mushrooms to impart further new functionality, and providing them by displaying each of the useful contained components of them, with inexpensive prices.

This low-granulated food of the mushrooms is obtained by low-granulating the raw materials containing the mushrooms. The enzyme-decomposed mushroom food is obtained by enzyme-decomposing the low-granulated mushroom with the enzyme, The enzyme-decomposed and fermented mushroom food is obtained by fermenting the enzyme-decomposed mushroom with useful microorganisms. The method for producing the above mushroom foods is also provided.
