Abstract:
PROBLEM TO BE SOLVED: To provide low-lactose and non-lactose milk products efficiently manufactured with a minimum loss without spending extra cost compared with conventional method, allowing for simple adjustment of milk components without addition of water, and a manufacturing method thereof.SOLUTION: Lactose in a milk raw material is hydrolyzed. The hydrolyzed milk raw material is subject to ultrafiltration, nano filtration, and dialysis filtration and ultrafiltration, so that proteins, minerals, and saccharides are separated into each of the different fractions of UF retention, UF passage, NF retention, NF passage, DF retention, DF passage, RO retention, and RO passage. The low-lactose and non-lactose milk products include the fractions. In addition, milk products with water content derived from the original milk raw material are provided. Furthermore, useful by-products are produced by the method.
