Abstract:
PROBLEM TO BE SOLVED: To provide a process for the production of low-lactose and lactose-free milk products without any extra costs, the process enabling a more efficient and simpler control of milk components at minimum costs, and requiring no separate addition of water.SOLUTION: Provided is a process for the production of a lactose-free or a low-lactose milk product, the process comprising a) adding a lactase enzyme into a milk raw material to completely or partially hydrolyze the lactose in the milk raw material, b) ultrafiltrating (UF) the hydrolyzed milk raw material to condense the proteins in the UF retention so as to obtain a UF permeate containing sugars, c) nanofiltrating (NF) the UF permeate such that the NF retention containing sugars and the NF permeate containing minerals are separated, and d) composing a lactose-free or a low-lactose milk product from the UF retention obtained by the step b) and the NF permeate obtained by the step c).SELECTED DRAWING: None
