Abstract:

PURPOSE: To obtain a yeast strain, sensitive to a low temperature and capable of preserving a bread dough at the low temperature by treating a baker's yeast strain belonging to Saccharomyces cerevisiae with 2-deoxygalactose.
CONSTITUTION: This baker's yeast strain sensitive to a low temperature such as Saccharomyces cerevisiae NITS-1 (FERM P-14040) is obtained by treating a baker's yeast strain belonging to the Saccharomyces cerevisiae with 2- deoxygalactose. Thereby, the bread which is not inferior to that prepared from a bread dough without preservation thereof at the low temperature is obtained from the bread dough preserved at the low temperature.
