Abstract:

PURPOSE: To obtain the subject lustering composition capable of forming a glossy tough crust free from exfoliation, reduction of gloss and stickiness when baking a bread or a cake after application to the surface of a dough of bread or cake by blending the whole egg or egg yellow with a specified starch decomposed material.

CONSTITUTION: With the whole egg or yellow egg in an amount of 100 pts. wt. on solid matter base, 50-100 pts.wt. starch decomposed material having 1-8 DE is blended and 0.5-3 pts.wt. xylose is further admixed therewith as necessary.
