Abstract:

PROBLEM TO BE SOLVED: To obtain magnesium emulsion capable of providing magnesium having good gustatory property and not forming the deposits when added to cow milk and various beverages such as refreshing beverage and juice by dispersing fine-powdered magnesium having a specific particle diameter and an emulsifying agent into water.
SOLUTION: This magnesium emulsion is obtained by dispersing fine- powdered magnesium having ≤0.7 μm average particle diameter and an emulsifying agent into water. In the emulsion, 5-20 wt.% fine-powdered magnesium having ≤0.7 μm average particle diameter and 0.1-5 wt.% emulsifying agent are preferably dispersed in water and the fine-powered magnesium is preferably magnesium derived from natural product, containing magnesium carbonate, magnesium oxide, magnesium calcium carbonate or magnesium hydrogenphosphate or one or more kinds of these compounds as main components.
