Abstract:
PURPOSE: To obtain a low density coffee product from uniform roasted coffee beans having a specified Hunter L value, a specified reduction of the Hunter L value and a specified total bulk density after roasting and packing obtd. by predrying, roasting and cooling raw coffee beans under specified conditions. CONSTITUTION: Raw coffee beans are dried at 70-350 deg. F for 1-24hr to reduce the water content to 0.5-7wt.% and they are roasted at 350-1,200 deg.F for 10sec to 5.5min and are cooled to obtain roasted coffee beans having a Hunter L value of 14-25 and 0.28-0.38g/cc total bulk density after roasting and packing. The reduction of the Hunter L value is <1.2. The objective low density coffee product is obtd. from the roasted beans.
