Abstract:

To provide a new amylase capable of producing large amounts of maltohexaose and maltoheptaose from starch, and its preparation process and use.

A microorganism-derived amylase mainly producing maltohexaose and maltoheptaose from starch without substantial decomposition of low molecular weight oligosaccharides smaller than maltohexaose. A microorganism producing the amylase, production of the amylase by the microorganism and sugars prepared by action of the amylase on carbohydrates and a composition containing the sugars, are provided.
