Abstract:
PROBLEM TO BE SOLVED: To provide a maltose-trehalose conversion enzyme converting maltose to trehalose, to provide a new method for producing trehalose by using the enzyme, and to provide applications of the trehalose.
SOLUTION: The maltose-trehalose conversion enzyme forms the trehalose by converting the maltose to the trehalose. The trehalose maltose is produced by containing the trehalose produced from maltose, glucide containing the trehalose and these glucides.
