To provide mannitol fondant having smoothness and property stability each equivalent to those of sugar fondant, and having a high crystal concentration: and to provide a method for easily producing the mannitol fondant.
The mannitol fondant 1 comprises capillary fine crystals 2 each consisting mainly of mannitol, and noncrystalline carbohydrate 3 as a crystal precipitation regulating agent other than the mannitol. The method for producing the mannitol fondant comprises the following process: boiling up a mixture liquid obtained by adding a prescribed amount of the noncrystalline carbohydrate and water as essential components to the mannitol; and cooling the mixture liquid into a prescribed temperature followed by stirring the mixture liquid at a high speed while continuing to cool the liquid to obtain the capillary fine crystals each consisting mainly of the mannitol and having an average length of ≤30 μm.
