To provide an easy to deal with and convenient manual knife sharpener which permits sharpening angles to be controlled with a simple structure.

The manual knife sharpener with a structure enabling control for maintaining a sharpening angle, is provided with a guide part 20 on which guide surfaces 18 for forming a prescribed angle with a grind surface 14 of a sharpening part 12 is provided. When a blade 16 is inserted into a space between the grind surface and the guide surface, the blade presses the guide surface so that the guide surface is moved linearly in approximately perpendicular to the guide surface. This movement of the guide surface is a lateral movement in the same plane, which does not accompany any rotary nor twisting motion of the guide part. Therefore the angle between the guide surface and the grind surface is kept constant regardless of displacement size of the guide part.
