Abstract:
PURPOSE: To obtain protein granules being useful as an extender of a meat product or a component of a meat resemblance by hydrating a vegetable protein separated material under a specified condition and sufficiently kneading the hydrated separated material under a shearing condition to granulate it. CONSTITUTION: A vegetable protein separated material (preferably, a soybean protein separated material) is made to be the hydrated separated material by adding 2-3.5 pts. (preferably, 3 pts.) to the separated material 1wt. part by water being more than 50 deg.C (preferably, 60-80 deg.C) and kneaded for 1-3 minutes under a reduced pressure of about 63cm (mercury) to granulate it so that the objective granules are obtained.
