Abstract:
PURPOSE: To produce a dehydrated aromatic plant product which presents color, flavor and aroma and overall appearance being the same as those of a plant just after cutting at the time of containing water again by forming a solid amorphous coating film on the organization of the aromatic plant by means of a specified method. CONSTITUTION: At first, the aromatic plant such as a basil or a parsley, etc., is infiltrated in plant organization and also immersed in a liquid bath being more than 180 deg.F, favorably, 190-210 deg.F, which contains a favorably 40-50 wt.% osmotic agent by which an amorphous solid body is formed at the time of dehydration. Then, the excessive osmotic liquid on the surface of the plant is removed, it is finished and dehydrated so as to permit a moisture content to be equal to below 6% favorably and, then, a target product provided with the solid amorphous coating film in every corner of the organization of the plant is obtained. Water is preferable as a solvent to be used for forming the liquid bath containing the osmotic agent. The infiltration time of the plant in the liquid bath is preferable to be 20-30 seconds to 5 minutes.
