Abstract:
PROBLEM TO BE SOLVED: To provide a manufacturing method of bread capable, even when bread is manufactured by using 100% domestically produced wheat flours, of moistly and impeccably baking the same.SOLUTION: The provided manufacturing method of bread includes a wheat flour mixing step S1 of preparing a mixed wheat flour by mixing a first domestically produced wheat flour having a high protein content (wheat type: "Yume No Chikara"), a second domestically produced wheat flour having a low protein content (wheat type: "Minaminokaori" or "Hokushin," etc.), and an exogenous enzyme for inhibiting enzymatic activity, a mixed wheat flour aging step S2 of inhibiting the enzymatic activity of the mixed wheat flour over a specified period, a bread dough production step S3 of producing a bread dough by mixing water and yeast, etc. with the mixed wheat flour and then kneading the resulting mixture, fermentation steps S4 and S8 of fermenting the bread dough by maintaining the same at fermentation temperatures, and a baking step S9 of bake-finishing bread by baking the fermented bread dough.
