Abstract:
PROBLEM TO BE SOLVED: To provide a manufacturing method of bread which can improve the quality easily without decreasing operation efficiency of the bread manufacturing, and compositions and the like used in the method.SOLUTION: Flavor improvement, texture improvement of clam and crust, aging suppression, suppression of top-face omission and caving, and upkeep and buildup of bread volume are achieved easily and efficiently by manufacturing bread with a manufacturing method including a step of mixing pregelatinized cornstarch and/or pregelatinized tapioca starch, partially pregelatinized wheat flour and/or partially pregelatinized starch, and non-gelatinized starch and/or wheat flour with water of a quantity of 1-2.5 times to be dispersed, and blending the mixture with wheat flour or other bread raw materials and kneading it.
