Abstract:
To provide a method for producing dried peeled meat of crab capable of not only being taken tastily by everyone but also causing a soft and a hard to be harmonized well so as to be helpful to health, and a producing device.SOLUTION: The method for producing dried peeled meat of crab includes steps of dipping peeled meat 7 of crab in thin saline water, then lightly exposing the peeled meat to air flow of almost normal temperature to thereby form a coating film and dry it to a moisture of 60 to 25%, growing the coating film thickly and solidly by drying or heating to thereby adjust a shear force to 13.0 to 22.0%, and vacuum-packing the adjusted dried meat and boiling it to thereby produce a product; in the case where shelf nets for loading thereon the peeled meat of the crab are arranged in a vertical direction, air conditioners for lightly exposing the peeled meat to air are disposed at upper and lower both ends so as to be alternately activable, and heating devices for blowing hot air onto the peeled meat are disposed at right and left both ends.SELECTED DRAWING: Figure 4
