Abstract:
To easily produce polysaccharide products having improved solubility, viscosity characteristics, gel texture, and the like.SOLUTION: The method for producing a polysaccharide product comprises: a mixing step of mixing a composition containing a terrestrial plant-derived polysaccharide and/or a microorganism-produced polysaccharide and water to obtain a water-swollen polysaccharide having an own shape retaining property; and a drying and pulverizing step of drying and pulverizing the water-swollen polysaccharide in an interval of 1 minute or less to obtain a polysaccharide product. It is preferable to have, after the mixing step and before the drying and pulverizing step, a heating step of heating the water-swollen polysaccharide to 50°C or more and a shearing step of providing the water-swollen polysaccharide with mechanical shear force.SELECTED DRAWING: None
