Abstract:
PROBLEM TO BE SOLVED: To provide a method capable of preciously predicting the content of 3-MCPD and aliphatic acid ester thereof in an oil and fat after heating for the oil and fat before heating, and a manufacturing method of refined oil and fat having reduced content of 3-MCPD and aliphatic acid ester thereof based on the method.SOLUTION: The invention provides a manufacturing method of refined oil and fat including a treatment process of conducting one or more kind selected from a group consisting of an alkali deoxidation process and a degumming process by water or acid to a raw material oil and fat without a heating treatment at 180°C or more to obtain a processed oil and fat, a prediction process of measuring total chloride amount in the processed oil and fat to obtain a prediction value of the amount of 3-chloropropane-1,2-diol and aliphatic acid ester thereof contained in the oil and fat when the processed oil and fat is heating treated at 180°C or more, and a selection process of selecting the processed oil and fat having the prediction value of a predetermined value or less.SELECTED DRAWING: None
