Abstract:

PURPOSE: To manufacture dried bonito which can be easily converted to flakes or shaved in home, by forming a seasoned bonito to a desired form, and processing according to conventional process for the manufacturing of dried bonito.

CONSTITUTION: Head, tail, entrails and belly flesh are removed from a bonito, and the bonito flesh is separated from bones and skin by a flesh separating machine. The flesh is mixed with seasonings and diluents, pressed into a basket or film tube having desired shape, boiled, taken out of the basket or tube, smoked and dried by conventional process, and if necessary, dried in the sun, and allowed to be covered with green mould, or finished to get a desired color.
