Abstract:
PROBLEM TO BE SOLVED: To provide a production method of mashed fermented soybeans.SOLUTION: A production method includes that when preparing soybeans, steamed soybeans are mashed by applying pressure with an upper and lower rollers 1, a spiral screw, and an upper and lower plate-like objects.EFFECT: Since fermented soybeans produced by the production method are provided with mashed soybeans, it can be eaten without much feeling of a texture of an individual soybean in one's mouth. As the soybeans are mashed, a taste of the fermented soybeans is improved and stickiness is increased.SELECTED DRAWING: Figure 1
