Abstract:

PURPOSE: To obtain a material, excellent in preservation quality and suitable as sliced potato confectionery by thinly slicing a potato freed of the epidermis, dipping the resultant slices in water, removing harshness, placing the resultant slices into hot water, boiling the slices, cooling the boiled slices with cold water, draining the cooled slices and drying the drained slices.

CONSTITUTION: A potato freed of epidermis is thinly sliced and the resultant slices are dipped in water to remove harshness therefrom. The slices are then pulled up from the water, placed in hot water and boiled until the slices become semitransparent. The slices are subsequently pulled up from the hot water, directly dipped in cold water, cooled, then drained and dried to afford a material for sliced potato confectionery. Since the obtained material for the sliced potato confectionery is not fried in an oil, preservation quality is excellent. Since the material is fried in an edible oil in use, taste and texture can be obtained in an always fresh state. Calcium phosphate can be added to the hot water used in boiling the slices to afford a milder taste.
