PURPOSE: To prevent metal powder from being mixed and meat quality from being deteriorated due to an increase in friction temperature, and at the same time, prolonging the life of parts by providing at least the sliding part of a meat cutting plate and/or knife made of ceramics.
CONSTITUTION: Although it is most effective to provide plates or knives which are entirely made of ceramics, the plate can be made with a ceramic sliding surface which meets the knife, and this ceramic sliding surface be jointed or bonded to a metal plate with an adhesive. In addition, a ceramic piece 2 can be jointed or bonded to the surface which slides on the plate of, for instance, a steel knife. In either one of the cases, it is recommended that the ceramic or a ceramic piece be processed in an anti-chipping form.
