Abstract:

To obtain a meat modification composition which contains esters from polycarboxylic acid and mono- and/or diglyceride, protein and polysaccharide and makes meat capable of being served as it is kept soft and rich with broth, even after it is cooked.

This composition contains (A) ester from polycarboxylic acid and monoglyceride and/or ester from polycarboxylic acid and diglyceride which is effective for softening meat and (B) protein (its hydrolyzate) and/or polysaccharide which effectively make meat juice rich. It is particularly effective in cooking a piece of meat having a certain size such as beefsteak.
